Text on each page is grouped into rows by its height on the page and into columns by where it starts, which rebuilds most tables. Amounts like $1,234.50 and 12% become real numbers you can add up, with the right format.
Scanned PDFs are read with OCR first. Complex layouts with merged cells or text wrapped inside cells may need a little tidying afterwards.

Will formulas come across?
No. A PDF only contains the results, so you get the values.
Does it work with Google Sheets?
Yes. Upload the .xlsx to Google Drive and open it with Google Sheets.
